Hello all! It’s Queen Bee Esther and I have been MIA for a little because my family and I have decided to fast and pray during the next 40 days. We started this past Monday and we still have a long ways to go. Now not only are we doing a fast but we are doing a Daniel fast! Which means that we get to eat meals but with various limitation on what we can eat. The most important being no meat, no sugar, and no dairy. We will also juice from time to time. I will also fast off of unnecessary spending habits, TV, and social media unless it pertains to business. Because I know a lot of people tend to do the Daniel fast first before journeying on other fasts, I decided to keep everyone up to date on what it is like to be on the Daniel fast and what foods we will be eating along the way. Honestly, I am not much of a cook but because we have a home business, I will be attempting to do most of the cooking for the next days to take some weight off of my dad cooking.
Along the way, I will post pictures of the meals that I cooked and the recipes from various sources online. Surprisingly, it was very easy for me to find quite a couple of different recipes to use on the fast so I am excited to share them with you. It is Day 3 of our fast and I have mixed feelings as of right now. I know that the change in food intake is a huge benefit to my body and its health but I also can’t help but miss my sweets and snacks. Thankfully, there are substitutions!
Here are pictures of what we had for the first 3 days of our fast.
Breakfast – G’Oatmeal
G’Oatmeal is a really great idea. The purpose of G’Oatmeal was to create a breakfast oatmeal muffin for on the go. I love this recipe and as I made it for the second time today, I took away some ingredients and added others. Aside from the recipe, I also added dried cranberries, some cinnamon, and raisins. I also took out the ground flax seeds. It turned out great and with this recipe I was able to make 16 muffins. It should last for the next 3 or 4 days. These can also be used for snacks by adding some more honey in the mix!
Dinner – Spicy Vegan Potato Curry, Dole Salad, and Herb and Olive Oil Flatbread
The spicy vegan potato curry was very easy to make and I doubled the recipe which worked out great because it actually lasted for 3 days. We may even have some left over for a fourth! I know that sounds like torture to eat the same thing 3 days in a row but it wasn’t all that bad! Potatoes tend to fill you up quickly so if you make a lot, it lasts longer. To accompany the potatoes we did a Herb and Olive Oil Flatbread with whole wheat flour and I will warn you now. It is vastly different in taste than using white flour, however, it worked out well. I seasoned the flour more than the recipe called for and added some more salt to give it some more taste. I also added some baking powder so it would thicken up a little. And lastly, you must have a salad! We love love love to go to Walmart and get our salads. They are all natural, already come chopped with its own salad dressing. All we have to do is put it in a bowl, add the dressing, and mix. Our favorite hands down is Dole’s Chopped Sunflower Crunch Salad Kit. It’s downright delicious, in a salad kind of way of course!
Tropical Fruit Salad
Since we are sticking to more of a one meal fast, we planned to have some snacks around the house that would fall in with the Daniel fast. And of course the next best thing to veggies are fruits! So we decided to do a simple tropical fruit salad. I did take out some fruits and use others from the recipe below. I find that red grapes and blueberries last a lot longer in the fridge than other fruits. I usually freeze the blueberries until I am ready to use them. The grapes we keep in the refrigerator. If I haven’t used all the watermelon for juicing, I also add some watermelon to the fruit bowl. In the picture you will also see some strawberries and minneolas (which I believe are a type of Tangerine…). The minneolas were not as sweet as we thought they might be. They are more on the tart side, so next time we will replace them with something else. Strawberries spoil very quickly so we will substitute those next time as well.
Almond Butter Bites
The almond butter bites I made just today and haven’t tasted them yet. I tasted the batter and they seem very promising. They have my favorites in them which are raisins, sunflower seeds, almonds, and shredded coconut so I am really excited to try them out. They are a no bake desert and all you have to do is put them in the freezer and take them out when ready to eat. Fingers crossed that they live up to expectations!
Juicing Recipe: Watermelon Carrot Juice
I’m sorry that I don’t have a picture for this as I forgot to take one but juicing recipes are great because you can really make them your own adding and subtracting what you desire. I am just going to give you the ingredient of what we put in this juice. The base fruit we use for this juice is Watermelon and the base vegetable we use are carrots. This recipe yielded a full jug of juice. We just finished it today!
3/4 or 1 Whole Watermelon
A few pieces of Celery Sticks
1 inch of Ginger
2 Green Apples
***As you can see we only gave you main recipes for Breakfast and Dinner. We are doing a one meal type Daniel fast where our main meal is our dinner. However, because I go to school and work, I needed to make some breakfast recipes for when I am on the go. Therefore, you will not see any lunch recipes throughout our fast.
